Ingredients for Baked Chicken and Broccoli Pasta
This is not a really juicy pasta recipe. There's just enough sauce to flavor the meat and pasta, but it doesn't float like some of the other baked pasta recipes.

If you prefer more liquid, I would add extra water and a tablespoon of cornmeal (mix to a paste with some water before pouring) to thicken it. If you want more liquid and more tomato flavor, you can alternatively add a can of diced tomatoes.
I use:
Kochspray– Switch to olive oil or another cooking oil if you prefer.

Broccoli– Fresh broccoli florets work best, I wouldn't recommend frozen broccoli as I've never tried it.

Can you use leftover chicken?
Leftover chicken and broccoli would certainly be a great way to use up leftovers! You can even add leftover broccoli and other veggies!
I recommend shredding the leftover chicken, it helps go the extra mile when you don't have much left and then skip the browning step.
Just make sure your chicken has been stored safely, has only been stored for a day or two, and is piping hot before serving!You can find more tips here..

If you're also using leftover veggies, skip the cooking step and mix them into the pasta before baking to keep them from getting too mushy.

Can I use chicken thighs?
Sim,chicken thighsThey are amazing, we use them often!
I recommend boneless, skinless chicken, but the thighs are just as good as the breasts.
What Type of Batter Should You Use to Bake Chicken and Broccoli Pasta?
I used fusilli because I have a kg bag in the closet!
Rigatoni is also good because the sauce gets into the wood and sticks.
But you can use any pasta, no rules! Just look at the baking instructions on the packaging.
What Cheese Should You Use When Baking Macaroni?
Shredded mozzarella cheese is great for a cheesy chicken and broccoli pasta bake. It melts very well and has a mild taste.
But cheddar is good too, or a mix. You can also mix in some grated Parmesan cheese for a little extra.
Any cheese that melts and you like it will be fine. Use what you have.

How big should the broccoli florets be?
I would say don't worry too much. Try cutting off large chunks of the stem, but the florets don't have to be uniform.
You don't want them to be huge or they will stick out and the top could burn. But everything between small and medium works very well.
Important tips for the perfect baked pasta dish
This chicken and broccoli pasta recipe is super easy and delicious. You can't go far wrong! But my top tips for the perfect pasta are always:
- Boil the noodles in salted water for half the time listed on the packet so they don't get mushy when baking, but you don't have to bake for hours to soften them.
- Use noodles with swirls or nubs to help the sauce stick.
- Use soft, full-fat cheese for a creamy sauce.
- Let the sauce simmer until thick enough to stick to the pasta. Add some cornmeal if you feel it's too thin.
- Before serving, let it sit for a few minutes so the sauce doesn't sink to the bottom once you cut it into the pasta casserole.








What to bake broccoli pasta for baking
If you have one, a large cast iron or similar bowl is ideal as it's both heat and oven safe, allowing you to cook the sauce on the stovetop and then bake it in the oven in the same pan.
If you don't have one, or your cast iron skillet isn't big enough, I recommend a large skillet for roasting the chicken and simmering the sauce, and then a large skillet.

How to serve baked chicken and broccoli pasta
I serve baked chicken broccoli pasta with a simple salad and garlic bread or buttered bread. Not cool. You could serve it yourself.

Ingredients
- 200g pasta – Something like fusilli or rigatoni
- 300g broccoli, cut into small to medium florets
- Cooking spray - or a little oil
- 3 large chicken breasts - diced
- ½ red onion - finely chopped
- 3 garlic cloves - crushed
- 500 ml chicken broth
- 100 grams of soft cheese
- 1 tablespoon of peppers
- 1 tablespoon puree
- A pinch of salt and pepper
- 100g Mozzarella
instructions
- Heat cooking spray in a large heatproof saucepan over medium-high heat.
- Add the chicken and fry until golden brown.
- Remove chicken from pan and set aside.
- In the same pan, sauté the onions for 5 minutes, stirring constantly.
- Add the garlic and sauté for another 2-3 minutes, stirring constantly.
- Pour in the broth and add the quark, paprika, salt and pepper and tomato paste.
- Stir well and bring to a simmer.
- Reduce heat and cook, stirring occasionally, until sauce thickens slightly, about 15-20 minutes, and remove from heat.
- While the sauce is simmering, cut the pasta in half according to package directions and add the broccoli for the last 2 minutes.
- Drain and reserve until the sauce is ready.
- Preheat the oven to 180°.
- When the sauce is ready, return the chicken to the pan and add the drained broccoli and pasta.
- Shake well.
- If your casserole dish is also ovenproof (e.g. a large cast iron dish), place the mozzarella directly on top.
- Otherwise place in a large fireclay and cover with mozzarella.
- Bake for 15-20 minutes until cheese is golden brown and chicken is hot.
