Easy Ricotta Lasagna

This overnight ricotta lasagna is made easy with a few shortcuts, like (gasp!) not cooking the pasta ahead of time.

Ingredients

  • 2 pounds ground beef, browned and drained
  • 2 (24 oz) glasses of prepared pasta sauce or 6 cups of homemade pasta sauce
  • 1 cup of water
  • 1 container (15 ounces) ricotta cheese
  • 1 egg, lightly beaten
  • ½ teaspoon garlic powder
  • 2 teaspoons Italian seasoning (or an equal mix of dried basil, dried oregano, and thyme leaves)
  • 1 cup grated parmesan cheese
  • 1 package (16 ounces) uncooked lasagna noodles
  • 4 cups grated mozzarella cheese

instructions

    1. Spray a 9x13 baking pan with nonstick cooking spray.

    2. In a large skillet, combine pasta sauce and ground beef. Bring to a simmer and heat.

    3. In a medium bowl, mix together ricotta, egg, garlic powder, Italian seasoning, and parmesan cheese. Shake well.

    4. Pour about 1 cup sauce into the skillet. Add the water and mix with a spoon or fork.

    5. Add a layer of lasagna pasta. Don't overlap them as the noodles will expand overnight.

    6. Pour the ricotta mixture over the pasta and spread evenly.

    7. Sprinkle about ¾ cup mozzarella cheese over the ricotta layer. Top with about 1 cup of the meat sauce. Start with a new layer of pasta and repeat the above, finishing with the remaining meat sauce. Store the remaining mozzarella cheese in an airtight container in the refrigerator.

    9. Place the covered pan in a cold oven. Set the oven to 350 degrees. Bake 45 minutes. Remove foil and top with remaining cheese. Return to the oven and bake uncovered for another 15 to 25 minutes or until cheese is melted and edges are bubbling.
