How to make easy gingerbread cookies
Below is a step-by-step guide on how to make this Gingerbread Cookies/Cookies recipe. See the recipe card for full instructions.
Step one:

Preheat the oven to 180°C (gas mark 4, 160° fan) and line two baking trays with baking paper.
Place the butter, light brown sugar, and golden syrup in a large bowl and melt in the microwave over medium-high heat. Every 15 to 20 seconds, pause the microwave and stir the mixture.
Second step:

Once melted, add the flour, baking soda, and ground ginger to the bowl and mix until a dough forms.
Step three:

Take a tablespoon of dough and form a ball with your palm. Place the ball on a baking sheet lined with parchment paper. Repeat this step for the rest of the dough; Leave a space between each ball.
Gently press the dough with your fingers to flatten it slightly.
ADVICE:When rolling out the dough, it may take a while for the dough to come together, but it will.
Step four:

Bake for 10 to 12 minutes.
After baking, let the cookies cool for at least 10 minutes. The cookies are very soft right out of the oven, but will firm up as they cool.

my best tips
Before baking in the oven, gently flatten the balls of dough to help the cookies expand. If you press too hard, the cookies will be thin and crunchy.
Make vegan gingerbread cookies with margarine instead of butter.
If you don't want the cookies to spread too much in the oven, chill the dough in the refrigerator or freezer for at least 15 minutes before baking. Don't flatten the dumplings either.
Ginger nuts may seem quite soft when you take them out of the oven, they will harden as they cool.
If the dough is too dry and won't come together, add a few tablespoons of milk or water to bind it together. You don't want the batter to be too sticky, so add a tablespoon or two of liquid at a time.
Gingerbread Cookie Recipe Variations
Add extra flavor to these gingerbread cookies by adding ginger. Not only does it add extra flavor, but it also adds another dimension of texture.
Chocolate goes with almost everything; You can add dark, milk, or even white chocolate chips.
If you want to make these gingerbread cookies gluten-free, use gluten-free flour when preparing this recipe. Baking soda is naturally gluten-free.
Add more spices! Cinnamon or mixed spices are great additions.

How long does gingerbread keep?
Homemade gingerbread cookies will keep for 3-5 days when stored in an airtight container at room temperature. If you want to keep cookies longer, I recommend freezing them.
Can you freeze gingerbread cookies?
Yes, for freezing:Place the gingerbread cookies in an airtight container and place in the freezer for up to 3 months.
Thaw the cookies at room temperature before serving. You can put it in the oven at low temperature to speed up the defrosting time.
You can also freeze the dough! Roll the dough into balls and place in a freezer-safe container. Bake the dough straight from the frozen state, you will need to add an extra 5-10 minutes of baking time.
