So what is the difference between molasses cookies and gingerbread cookies? While both have similar flavors, molasses cookies are soft, moist, and chewy while gingerbread cookies are crispier, crunchier, and drier. Personally, I prefer the former for those enticing textural qualities.

These are popular Christmas cookies that have stood the test of time, and with good reason. They're a great tradition with their festive spice flavors, pretty shiny finish, plus they're fun and easy to make.

These old-fashioned treats have a very strong and attractive flavor that will have you craving again and again! Truly a holiday staple.

Recipe ingredients for molasses biscuits

  • All Purpose Flour:I recommend using unbleached if possible, if bleached is all you have that will work in a pinch too.
  • Natriumbicarbonat:There is no substitute here. This will help the cookies rise.
  • Salt:Just use fine table salt or sea salt.
  • Dried Ginger, Cinnamon, Cloves and Nutmeg:I like that they are flavorful, but you can adjust the amounts to your liking. Some may prefer to increase the cloves to 1/2 teaspoon for a stronger flavor or halve the ginger for a milder flavor.
  • Unsalted Butter:If you only have salted butter on hand, that works too. If you do this, add only 1/8 teaspoon of salt to the flour mixture.
  • Granulated sugar and light brown sugar:Granulated sugar is used for rolling out to a glossy finish and slight crunch (on the outside), then brown sugar is used in the molasses cookie dough.
  • Molasses:I like using the full flavor of Brer Rabbit (it has a good texture too), but a milder option works just as well.
  • Vanilla extract:We've doubled up to 2 teaspoons here for extra flavor.
  • Egg yolk:In the process, I've found that all you really need is the yolk (reserve the egg white for another use). This allows you to add a few extra tablespoons of molasses to the batter for added flavor.

How to make molasses cookies

  1. Preheat oven, prepare baking trays:Preheat oven to 350 degrees. Line two 18 x 13 inch baking sheets with parchment paper and set aside.
  2. Stir in dry ingredients:In a medium bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg for 30 seconds and set aside.
  3. Cream the butter and brown sugar in a mixer:In the bowl of an electric mixer fitted with the paddle attachment, cream together the butter and brown sugar until well combined. Scrape down the sides and bottom of the container.
  4. Mix wet ingredients:Add molasses, egg yolk and vanilla extract. Scrape down the sides and bottom of the container.
  5. Add to the flour mixture:Add the flour mixture and mix until just combined.
  6. Shape the dough into balls:Place granulated sugar in a small bowl. Remove the dough and shape into golf ball sized balls (30g each).
  7. Dip the balls in sugar:Roll each ball of dough in granulated sugar and place 2 inches apart on baking sheets.
  8. Annoy:Bake one cookie sheet at a time in the preheated oven for 9 to 11 minutes, until cookies are puffed up and appear lightly cooked in the center.

Helpful tips

  • The consistency of each brand of molasses is different. If the dough is too soft, you can refrigerate it for 30 minutes before shaping, if needed.
  • Work to keep the dumplings the same size so they finish baking at the same time. I like to use a medium cookie scoop or a quick drip and they weigh 30 grams each.
  • I like these cookies better the second day. They become even softer and the flavors seem to blend so harmoniously after a little rest.
  • For extra fluff, you can add a slice of bread to the cookies in the storage container.

Variations on the recipe for molasses biscuits

  • Add some orange zest directly to the cookies or add some granulated sugar to thicken the cookie dough.
  • Try with 1 cup white chocolate chips mixed into the batter, or dip in melted white chocolate after baking and cooling.
